APPETIZER: BRIE CHEESE FONDUEIngredients • 2 cloves garlic, crushed• 1 cup dry white wine• 1/4 cup sherry• 1 lb. Brie cheese, cubed• 1 tablespoon cornstarch• 1/4 teaspoon Allspice• Kosher salt to taste• 1/4 teaspoon white pepperDirections 1. Rub the garlic cloves all over the inside of the pot. Heat the pot over medium heat and add the dry white wine and sherry.2. Dredge the cheese cubes with cornstarch. Add the cheese cubes to the pot. Stir gently and frequently. 3. Cook until the cheese is melted. Turn the heat off and add Allspice, salt and white pepper. 4.Keep your fondue warm over low heat.
MAIN COURSE: FILET MIGNON WITH FINE GLAZEIngredients• 2 (4-ounce) filet mignon steaks• 1 teaspoon fine sea salt• 1/2 teaspoon freshly ground black pepper • 1 tablespoon olive oil• 1/4 cup balsamic vinegar• 1/4 cup dry red wine• 1 teaspoon basil • 1 handful fresh parsley for garnishDirections 1. Season filet mignon steaks with salt and black pepper.2. Heat olive oil in a cast-iron skillet over medium-high heat. Cook seasoned steaks for 1 to 2 minutes on each side, or until they are browned. 3. Reduce the heat to low, add balsamic vinegar and red wine. Cover with the lid, and simmer for 4 to 5 minutes on each side.4. Serve warm.
DESSERT: CHOCOLATE WINE CAKEIngredients • 1 cup butter• 1 cup sugar• 4 eggs• 1 teaspoon vanilla • 1 (12-ounce) package semisweet chocolate chips• 1 teaspoon baking powder• 1 teaspoon baking soda• 2 1/4 cups fine pastry flour• 1/2 cup dry red wine• 4 tablespoons cocoa powderDirections1. Preheat oven to 360 degrees F. Butter a Heart shaped cake pan.2. In a mixing bowl, combine together butter, sugar, eggs, vanilla and chocolate chips until the mixture is smooth and well blended.3. In a separate bowl, sift baking powder, baking soda and flour. Add the flour mixture to the chocolate mixture.4. Pour in dry red wine and stir to combine. Add cocoa powder and stir to combine.5. Bake the cake for 45 minutes to 1 hour. Decorate and serve.
